Bacon and Egg Wraps

These Bacon & Egg Wraps feature fluffy scrambled eggs and crispy bacon wrapped in warm flour tortillas, served with a fresh mandarin orange on the side—a quick and satisfying breakfast!

Ingredients

Pantry

  • 4 Flour Tortillas

  • 4 Mandarine Oranges

Fridge and Freezer

  • 8 Eggs

  • 4 slices Bacon (or turkey bacon)

Directions
  1. Wash hands with soap and water. If using turkey bacon, cook according to package instructions, then skip to step 3.

  2. Heat a skillet over medium-high heat. Cook 4 slices of bacon on each side until browned and crispy (be careful of hot grease spatters). Carefully remove bacon to a paper towel to drain. Carefully pour the bacon grease into a heat-proof container to cool, then discard.

  3. Heat skillet over medium-high heat, adding a small amount of oil if needed. In a small bowl, beat the eggs and season with salt and pepper if desired. Add the eggs to the skillet and stir until set.

  4. Lay 4 flour tortillas on clean plates. Divide eggs between each tortilla and add a slice of bacon. Roll up and serve, with an orange on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
