Bacon Cauliflower Pasta

This Bacon Cauliflower Pasta combines tender penne with crispy bacon, sautéed cauliflower, and savory Parmesan for an easy, rich and satisfying dish!

Ingredients

Pantry

  • 1 lb Penne Pasta

  • 1 tsp Garlic Powder

Fridge and Freezer

  • 4 slices Bacon (or turkey bacon)

  • 1 head Cauliflower

  • 1 cup Parmesan

Directions
  1. Wash hands with soap and water. Cut the cauliflower into florets and discard the stalk.

  2. Cook pasta according to the package instructions. Drain, reserving ½ cup of the cooking water, and return the pasta to the pot it was cooked in.

  3. Dice the bacon (always wash hands before and after handling raw meat). Heat a large skillet over medium-high heat, cook the bacon, stirring occasionally for 2 minutes, then add in the cauliflower florets and garlic powder and cook, stirring occasionally, for 5 minutes.

  4. Season with salt and pepper, if desired (the bacon will make this recipe salty). Pour ¼ cup of the reserved pasta water into the bacon and cauliflower and cook for an additional minute. Remove from heat.

  5. Add the bacon and cauliflower mixture to the pasta, add the parmesan, stir, and serve. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.

*Make this recipe gluten-free by substituting a gluten-free pasta.

*Make this recipe pork free by substituting turkey bacon.
