Bacon Egg and Cheese Sandwich

4 Brioche Buns
¼ cup Honey
Fridge and Freezer
4 slices Bacon (or turkey bacon)
4 slices Cheddar Cheese
4 Fruit Cups
4 Eggs
Directions
Wash hands with soap and water. Beat 4 eggs in a small bowl and season with salt and pepper. Open the brioche bums on a clean surface, cut side up.
If using turkey bacon, skip this step and cook according to package instructions. Heat a skillet over medium high heat and cook the bacon until crisp on each side. Remove bacon to a paper towel to drain.
Drizzle bacon grease from pan onto brioche buns. Place the pan back on the heat
Add eggs to pan and cook, stirring once or twice, until eggs are set. Use a spatula to cut eggs into four pieces.
Toast the buns under the broiler for about 1 minute (watch carefully, oven times vary). Fill buns with eggs, 1 slice of bacon each, and 1 slice of cheese each. Drizzle each sandwich with honey, if desired, and press together to form 4 sandwiches.
Serve with fruit on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
