Bacon Veggie Skillet
This Bacon Veggie Skillet is a hearty, flavor-packed dish featuring crispy bacon, tender red potatoes, sautéed onions and bell peppers, and fresh cherry tomatoes and spinach, all seasoned with a savory spice blend—a delicious one-pan meal!

Ingredients
Pantry
8 Red Potatoes
1 Onion
1 Bell Pepper
1 pint Cherry Tomatoes
1 tbs All Purpose Spice Blend
Fridge and Freezer
4 slices Bacon (or turkey bacon)
2 cups Spinach
Directions
Wash hands with soap and water. Wash and dry the produce. Cut the potatoes into cubes. Halve the cherry tomatoes. Peel and chop the onion. Seed and chop the bell pepper.
Heat a large skillet over medium-high heat. Dice the bacon, washing hands before and after handling raw meat. Add the bacon to the skillet and cook until crisp. Remove to a paper towel-lined plate. Return the skillet to the heat.
Cook the potatoes until softened. Add the onion, bell pepper, and the spice blend. Cook until onions and peppers are tender. Stir in the bacon, cherry tomatoes, and spinach (about 3 handfuls). Season with salt and pepper.
When spinach is wilted, remove from heat and serve. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
*Substitute turkey bacon to make this recipe pork-free.
