Banana Oatmeal Bread

Ingredients

Pantry

  • ⅓ cup Oil

  • 1 cup Oats

  • ½ cup Sugar

  • 1 Banana

  • 1 ½ cups Whole Wheat Flour

  • 2 tsp Baking Powder

  • 1 tsp Baking Soda

  • ¼ tsp Salt

  • 2 Eggs

  • ½ cup Peanut Butter (or alternative)

Fridge and Freezer

  • ¼ cup Milk

Directions
  1. Wash hands with soap and water. Preheat the oven to 350 degrees F. Lightly grease the bottom and sides of an 8-inch square pan or a loaf pan.

  2. Peel the banana. In a medium bowl, mash the banana with a fork. Add the oats, sugar, ⅓ cup cooking oil, 2 eggs and ¼ cup milk (or alternative). Let this mixture stand for at least 10 minutes.

  3. In a small bowl, combine the flour, baking powder, baking soda and salt. Add the flour blend to the banana mixture and stir gently to combine. Be careful not to overmix.

  4. Pour the mixture into the bread pan and spread evenly. Bake for 35-50 minutes or until a wooden pick inserted into the center of the loaf comes out clean (if you use a square pan instead of a bread pan, it will bake faster).

  5. Remove from the oven and let cool in the pan for 10 minutes. Cut into 12 slices. One serving is 2 slices, each with 1 tbs nut butter. Save leftovers for later in the week. Wrap to store for several days or freeze for up to a month.

*Use an alternative nut or seed butter if desired.

*Use a milk alternative to make this recipe dairy-free.
