Banana Pancakes
These Banana Pancakes are fluffy and naturally sweet, made with mashed bananas and a simple baking mix, then served with creamy nut or seed butter for a delicious and satisfying breakfast!

3 tbs Oil
2 cups Baking Mix
2 Bananas
¼ cup Peanut Butter (or alternative)
Fridge and Freezer
1 ½ cups Milk
2 Eggs
Directions
Wash hands with soap and water. Lightly grease a large skillet or griddle. Heat skillet or griddle over medium-high heat (350 degrees F in an electric skillet).
In a mixing bowl, mash 2 bananas with a fork. Add the eggs, milk (or alternative) and vegetable oil and mix well. Add the baking mix. Mix gently until just combined.
Spoon 1/4 cup batter onto the griddle for each pancake. Cook until the tops are bubbly and the pancakes are dry around the edges. Flip and cook for 2 to 3 minutes or until golden brown.
1 serving is 4 pancakes, the recipe makes 16 pancakes. Serve with 1 tablespoon of nut or seed butter. Refrigerate leftovers within 2 hours.
