1 Bell Pepper
Fridge and Freezer
1 package Pizza Dough (or GF crust)
8 oz Cooked Chicken
1 8-oz bag Mozzarella
¼ Red Onion
½ cup BBQ Sauce
Directions
Wash hands with soap and water. Preheat the oven to 450 degrees. Grease a large baking sheet. Chop cooked chicken into bite-size pieces. Wash, dry, seed and slice the bell pepper. Chop ¼ of a red onion, wrapping and reserving the rest in the fridge for another use.
If using gluten-free crusts, follow package instructions. Otherwise, on a lightly floured clean surface, spread the pizza dough using your hands or a rolling pin into a 12-inch circle. Carefully move the crust to the prepared pan.
Spread about ½ cup BBQ sauce on the pizza crust. Scatter the cheese on top, then top with chicken, bell pepper, and red onion.
Bake for 15 minutes or until the cheese is melted and starting to turn golden. Serve immediately, or refrigerate leftovers within 2 hours. Serves 4.
