Bean and Cheese Burritos

These Bean and Cheese Burritos are a simple, satisfying meal that’s easy to prepare and perfect for freezing and reheating. Soft flour tortillas are filled with warm, seasoned refried beans and melty cheddar cheese, then rolled and lightly toasted for a golden, crispy exterior. Serve with a side of fresh fruit for a balanced meal. Whether made fresh or frozen for later, these burritos are a convenient and delicious go-to option!

Ingredients

  • 1 15-oz can Refried Beans

  • 4 Flour Tortillas

  • 4 Fruit Cups

Fridge and Freezer

  • 1 cup Cheddar Cheese

Directions
  1. Wash hands with soap and water. In a medium bowl, combine the refried beans and ¼ cup water. Heat in the microwave 1 minute at a time, stirring each time, until heated through.

  2. Place a tortilla on a work surface. Spread ⅓ cup of beans in the center of the tortilla. Top with ¼ cup shredded cheese.

  3. Fold the sides, 1 to 2 inches inwards. This will prevent the filling from falling out of the bottom of your burrito as you eat it. Next, fold the bottom over so it completely covers the filling. Starting with the bottom flap that’s covering the filling, roll the burrito, tucking the flap firmly inwards as you roll to secure the fillings. Continue rolling until your burrito is seam side down. Continue making burritos with remaining ingredients.

  4. Choose one of the following cooking methods:

    SKILLET METHOD: Heat a large skillet over medium-high heat. Place the burrito seam side down in the pan and heat for a few minutes on each side until the outside is slightly crisp and the burritos are warm.

    OVEN METHOD: Wrap the burritos in foil and place them on a baking sheet. Bake at 375 degrees F for 12 to 15 minutes or until they are warm all the way through and slightly crisp on the outside.

  5. Serve each burrito with fruit on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
