Ingredients

Pantry

  • 1 cup Barley

  • 4 15-oz cans Broth

  • 1 15-oz can Diced Tomatoes

Fridge and Freezer

  • 1 lb Ground Beef, thawed

  • 1 Carrot

  • 1 Onion

  • 2 stalks Celery

  • 1 tbs minced Garlic

Directions
  1. Wash hands with soap and water. Wash the vegetables. Peel the carrot and onion. Chop the onion, celery and carrot.

  2. In a large saucepan, cook ground beef over medium heat. Add the vegetables; stir often and cook for about 5 minutes. If using a slow-cooker, add to the slow-cooker now.

  3. Add broth, canned tomatoes, and barley. Season with salt and pepper, if desired. Choose one of the following cooking methods:

    SLOW COOKER: cook on low for 6-8 hours or high for 2-4 hours.

    STOVETOP: Bring to a boil. Cover and reduce heat to simmer. Cook for 45 to 60 minutes or until barley is tender.

  4. Divide into 4 portions, and serve warm. Refrigerate leftovers within 2 hours.
