Our Beef and Biscuit Casserole is a comforting and hearty dish that brings together a savory beef and vegetable filling with a golden, fluffy biscuit topping. Ground beef is combined with onions, carrots, celery, cherry tomatoes, and a rich Italian-seasoned sauce, creating a flavorful base. The casserole is then topped with soft, homemade biscuits, baked to golden perfection.

Ingredients

Pantry

  • 1 cup Baking Mix

  • 1 pint Cherry Tomatoes

  • 1 tbs Italian Seasoning

  • ½ cup Cream

  • ¼ cup Tomato Paste

  • ¼ cup Worcestershire Sauce

  • 1 cup Sour Cream

  • ¼ cup Milk

Fridge and Freezer

  • 1 lb Ground Beef, thawed

  • 1 Carrot

  • 1 Onion

  • 1 stalk Celery

Directions
  1. Wash hands with soap and water. Preheat the oven to 450 degrees. Wash and dry the tomatoes. Grease a casserole dish. Wash the carrot, celery and tomatoes. Peel and chop the onion and carrot. Chop the celery.

  2. Combine the cream, tomato paste and worcestershire sauce with the onion, Italian seasoning, celery and carrot, and tomatoes in the casserole dish. Season with salt and pepper, if desired.

  3. Tear ground beef into bite-size pieces and sprinkle into the dish (always wash hands before and after handling raw meat). Stir the beef into the other ingredients. Cover the dish with a lid or foil and bake for 15 minutes.

  4. Meanwhile, in a medium mixing bowl, mix the baking mix with ½ cup sour cream and ¼ cup of water or milk until just combined. Remove foil from the casserole and drop 12 large spoonfuls of batter on top.

  5. Return to the oven and bake, uncovered, for another 15 minutes, or until biscuits are browned and beef is cooked through. The recipe makes 6 servings. Refrigerate leftovers within 2 hours.
