Beef and Bok Choy Stir-Fry

Ingredients

1 lb Ground Beef, thawed
1 bunch Radishes
1 bunch Bok Choy
1 bunch Green Onions
1 tbs minced Garlic
1 tbs minced Ginger
¼ cup Mayonnaise
1 tbs Hot Sauce
Pantry
1 tbs Soy Sauce (optional)
1 tbs Red Wine Vinegar
2 cups White Rice
Directions
Wash hands with soap and water. Wash and dry the radishes and green onions. Cut off and discard the roots and stems of the radishes, slice, and place in a small bowl. Slice the green onions, discarding the roots.
Cut off and discard the root ends of the bok choy; thinly slice crosswise. Add to a large bowl of cold water, swirling around to remove dirt and sand. Remove to a towel to dry.
In a bowl, combine the green onions, vinegar, and 1 tbs oil and season with salt. Pour over the radishes.
Use a rice cooker or the video to cook rice.
Heat a large skillet over medium-high until hot. Add the beef and garlic and ginger; season with salt and pepper.
Cook, stirring frequently and breaking the meat apart with a spoon, 4 to 5 minutes, or until lightly browned. Add the soy sauce (if desired) and sliced bok choy. Cook, stirring frequently, 1 to 2 minutes, or until combined and the beef is cooked through.
In a small bowl, combine ¼ cup mayonnaise, 1 tbs hot sauce, and 2 tbs water. Serve the rice topped with the beef and bok choy, marinated radishes (including any liquid), and drizzle with the spicy mayo. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
