Beef Gyros with Fries

Ingredients

Pantry

  • 1 tbs Greek Spice Blend

  • 4 Russet Potatoes

  • 6 Pitas (optional)

  • 1 tbs Olive Oil

  • 1 tbs Red Wine Vinegar

Fridge and Freezer

  • 1 tbs minced Garlic

  • ¼ Red Onion

  • 2 Tomatoes

  • 1 Cucumber

  • 6 servings Hummus (optional)

  • 1 4-oz container Feta (optional)

Directions
  1. Wash hands with soap and water. Preheat the oven to 450 degrees. Grease a baking sheet.

  2. Wash and dry the vegetables. Peel potatoes, if desired, then slice into ¼” fries. Toss the fries with a little oil, season with salt and pepper, and spread on the baking sheet. Roast 20-35 minutes, or until tender and browned. Leave the oven on after baking the fries for step 4.

  3. Chop the tomato. Peel and chop ¼ of a red onion. Peel, seed and chop the cucumber. Combine all in a medium bowl along with the olive oil and vinegar. Season with salt and pepper.

  4. Heat a little oil in a large skillet over medium-high heat. Add the ground beef, garlic, and Greek seasoning. Cook, breaking up with a spatula, until browned and cooked through.

  5. Skip this step for gluten-free: Add the pitas directly onto the rack of the oven and bake for a few minutes until warmed but not browned.

  6. Divide meat, hummus, salad, and feta into 6 servings and serve each with a pita, if desired. If making the gluten-free version without pita, this recipe makes 4 servings. Refrigerate leftovers within 2 hours.

*Omit hummus to make this recipe soy and sesame-free.

*Omit pitas and serve as a salad to make this recipe gluten-free.
