Ingredients

Pantry

  • ¼ cup Cornstarch

  • ¼ cup Brown Sugar

  • 1 tsp Red Pepper

  • 2 cups White Rice

  • ¼ cup soy sauce (or coconut aminos)

Fridge and Freezer

  • 1 lb Stir-Fry Beef, thawed

  • 1 tbs minced Ginger

  • 1 tbs minced Garlic

  • 1 bag Frozen Stir-Fry Vegetables

  • 1 bunch Green Onions

Directions
  1. Wash hands with soap and water. Wash and dry the green onions. Cut off the root ends, remove any wilted leaves, and slice, separating the white bottoms from the green tops.

  2. Cook the rice using a rice cooker or the video.

  3. Steam the vegetables according to package instructions.

  4. Place the beef in a ziploc bag and add the cornstarch. Toss to evenly coat. Heat a little oil in a large skillet over medium-high heat. Shake off any excess cornstarch and carefully add the beef in an even layer, breaking up any chunks. Let cook undisturbed for 4-5 minutes. Using tongs, flip the beef to the other side and let cook for another 2-3 minutes. Transfer to a plate.

  5. In a small bowl, combine the soy sauce (or coconut aminos for gluten-free), red pepper, brown sugar, and ginger and garlic. Add the white onion bottoms to the sauce. Heat a little more oil in the pan and add the sauce, cooking until slightly thickened. Add the beef back to the pan and stir to coat, then remove from heat.

  6. Serve beef and vegetables over rice, topped with green onions. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.

*Replace soy sauce with coconut aminos to make this recipe soy and gluten-free.
