BLT Kale Salad

Ingredients

Pantry

  • ¼ Red Onion

  • 1 Tomato

  • ¼ cup Sunflower Seeds

  • ¼ cup Olive Oil

  • 3 tbs Apple Cider Vinegar

Fridge and Freezer

  • 4 cups Kale

  • 4 Eggs

  • ½ cup Bacon Bits

  • 1 tbs Dijon Mustard

  • ¼ cup Lemon Juice

Directions
  1. Wash hands with soap and water. Wash and dry the produce. Chop the tomato. Slice the celery. Chop ¼ of a red onion, reserving the rest, wrapped, in the fridge for later use.

  2. Make hard boiled eggs using the video. Once eggs are cool, peel and slice them.

  3. Pour the kale into a large bowl. In a small bowl, combine the oil, vinegar, mustard and lemon juice and season with salt and pepper (if desired). Pour over kale, and mix vigorously with a wooden spoon to soften the kale.

  4. Divide salad into 4 bowls. Top with bacon, sunflower seeds, and sliced hard-boiled eggs. Recipe makes 4 servings. Refrigerate leftovers within 2 hours.
