Breakfast Burritos

These hearty Breakfast Burritos are packed with fluffy scrambled eggs, seasoned refried beans, melted cheddar cheese, and zesty salsa, all wrapped in a warm tortilla. Perfect for a satisfying morning meal, they can be made ahead and reheated for a quick, protein-rich breakfast.

Ingredients

Pantry

  • 1 tbs Southwest Spice Blend

  • 4 Flour Tortillas

  • 1 15-oz can Refried Beans

Fridge and Freezer

  • 6 Eggs

  • ⅓ cup Milk

  • 1 cup Cheddar Cheese

  • 1 cup Salsa

Directions
  1. Wash hands with soap and water. Whisk 6 eggs, ⅓ cup milk, and spice blend in a bowl until well mixed. Heat a little oil in the skillet or pan over medium-high heat (350 degrees in an electric skillet).

  2. Pour egg mixture into the skillet. Stir with a heat-proof spatula and cook until firm.

  3. Meanwhile, preheat the oven to 200. Wrap the stack of tortillas in foil and warm in the oven until ready to use.

  4. Put the refried beans in a small saucepan over medium-high heat. Add a little water and heat and stir until smooth and warmed through. (You can also do this in the microwave, heating 1 minute at a time and stirring in between).

  5. Carefully lay out the warm tortillas on plates. Divide the beans, eggs and cheese between each tortilla. Roll the burrito, cut in half, and serve with salsa. Makes 4 burritos. Can be prepared ahead and reheated. Refrigerate leftovers within 2 hours.

*Use gluten-free tortillas to make this recipe gluten-free.
