Broccoli Cheddar Soup

Pantry
1 Onion
2 15-oz cans Broth
¼ cup Flour
4 Dinner Rolls
Fridge and Freezer
1 Carrot
5 tbs Butter
1 lb Frozen Broccoli
1 cup Cheddar Cheese
2 cups Milk
Directions
Wash hands with soap and water. Wash and dry the carrot. Peel and chop the onion and carrot.
Heat 1 tbs butter in a saucepan over medium-high heat. Saute veggies until onions begin to brown. Add broth and broccoli.
Choose one of the following cooking methods:
STOVETOP METHOD: Simmer until broccoli is tender, 5 to 7 minutes.
SLOW COOKER INSTRUCTIONS: empty pan into slow-cooker and cook on low for 6-8 hours or high for 2-4 hours.
Combine 2 cups of milk with the flour, then stir into the soup. Season with salt and pepper, if desired. Turn up to high and heat to a boil, covered, until slightly thickened, 3-5 minutes. Reduce to low.
Add cheese and stir until melted. Serve hot with buttered rolls on the side. Makes 4 servings. Refrigerate leftovers within 2 hours.
