2 15-oz cans Broth
1 packet Taco Seasoning
1 10-oz box Instant Brown Rice
1 15-oz can Corn
1 15-oz can Black Beans
Fridge and Freezer
1 cup Cheddar Cheese
1 cup Salsa
Directions
Wash hands with soap and water. Put the broth and taco seasoning in a large saucepan and bring to a boil.
Add the rice, salsa, corn and beans. Turn heat to low, cover the saucepan and let cook without stirring for 10 minutes or until rice is cooked through.
Gently stir before serving. Serve topped with cheese, if desired. Serves 4. Refrigerate leftovers within 2 hours.
