Cajun Dirty Rice

1 Bell Pepper
1 Onion
1 tbs Cajun Spice Blend
2 cups White Rice
Fridge and Freezer
1 tbs minced Garlic
2 Celery stalks
1 lb Ground Beef, thawed
Directions
Wash hands with soap and water. Preheat the oven to 425. Wash and dry produce. Peel and chop the onion. Chop the celery. Seed and chop the bell pepper.
Heat a large oven-proof skillet over medium-high heat and cook ground beef, breaking up with a spatula, until almost done. Add the onion and bell pepper and cook until beef is browned and vegetables are tender. Add the garlic and cook 1-2 minutes more, until fragrant.
Stir in cajun seasoning and 2 ½ cups water and bring to a simmer. Cover and transfer to the oven. Bake until rice is tender and liquid is absorbed, 18-22 minutes.
Divide rice into 4 bowls to serve. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
