Cheese Quesadillas
A simple and crowd-pleasing meal, these Cheese Quesadillas are a favorite for picky eaters, featuring crispy golden tortillas filled with melty cheddar cheese. 4 Flour Tortillas
1 15-oz can Refried Beans
1 15-oz can Corn
Fridge and Freezer
1 8-oz bag Cheddar Cheese
Directions
Wash hands with soap and water. Open and drain the can of corn.
Heat a little oil in a large skillet over medium high heat. Add a tortilla, and sprinkle ½ cup cheddar cheese over one half. Fold the tortilla over and cook until browned on each side, 1-3 minutes. Repeat for all quesadillas. Keep the quesadilla warm until all are cooked.
Meanwhile, add the refried beans to a bowl with ¼ cup water. Microwave 1 minute at a time, stirring each time, until heated through.
When quesadillas are cooked through, remove from the skillet and add the corn to heat through. Season with salt and pepper.
Cut each quesadilla in half and serve with beans and corn on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
