Chicken and Rice Soup

Ingredients

Pantry

  • 1 15-oz can Broth

  • 2 cups White Rice

  • 1 tbs Italian Seasoning

Fridge and Freezer

  • 8-oz Cooked Chicken

  • 1 1-lb bag Frozen Peas and Carrots

Directions
  1. Wash hands with soap and water. Cut chicken into bite-sized pieces.

  2. Choose one of the following cooking methods:

    STOVETOP METHOD: Bring 5 cups of water and broth to a boil. Add the rice, 1 lb cooked chicken (⅓ of a 3-lb bag), frozen peas and carrots, and Italian seasoning. Season with salt and pepper if desired. Reduce heat to simmer, cover the pan and cook for 20 minutes or until the rice and vegetables are tender.

    SLOW-COOKER METHOD: Add rice, chicken, Italian seasoning, broth, and 5 cups of water to a slow cooker and cook for 2-4 hours on high. Stir in the peas and carrots and cook through.

  3. Makes 4 2-cup servings. Refrigerate leftovers within 2 hours.
