Chicken and Tomato Pasta
This Chicken and Tomato Pasta is a hearty and flavorful dish featuring tender chicken, sautéed onions, and spinach tossed with rotini pasta in a savory tomato-based sauce. A touch of sour cream adds creaminess, while Parmesan brings a rich, cheesy finish.

1 Onion
1 lb Rotini Pasta
1 15-oz can Diced Tomatoes
1 tbs Italian Seasoning
Fridge and Freezer
2 tbs Sour Cream
1 tbs Hot Sauce
1 tbs minced Garlic
1 tbs Tomato Paste
1 lb Chicken tenders, thawed
1 10-oz bag Spinach
½ cup Parmesan
Directions
Wash hands with soap and water. Fill a large pot ¾ full of water and bring to a boil over high heat. Peel and chop the onion.
Cook the pasta according to package directions and drain, then return to the pot.
In a small bowl, combine ½ cup water, 1 tbs tomato paste, 1 tbs hot sauce, and garlic.
Heat a little oil in a large skillet over medium-high heat. Cook the chicken, Italian seasoning, and season with salt and pepper, if desired. Add the onion, canned tomatoes, and the bowl of tomato paste mixture and cook until thoroughly combined.
Add the chicken mixture and spinach to the pot of pasta and stir over medium-high until spinach is wilted and pasta is coated (add a little water if it seems too dry). Turn off the heat and stir in the sour cream.
Serve pasta topped with parmesan. The recipe makes 4 servings. Refrigerate leftovers within 2 hours.
