Chicken and Waffles

1 cup Cornstarch
1 cup Flour
1 tbs All Purpose Spice Blend
2 cups Baking Mix
2 Apples
1 tbs Sugar
1 tbs Cinnamon

4 Boneless Skinless Chicken Thighs, thawed
2 Eggs
1 cup Buttermilk
¼ cup Butter
¼ cup Pancake Syrup
1 ⅓ cups Milk
Directions
Wash hands with soap and water. Prepare three shallow bowls, one with the cornstarch, one with 1 beaten egg and ⅔ of the buttermilk, and one with the flour and spice blend.
Dip each chicken thigh into the cornstarch, then the egg, then the flour, and place each on a plate. Always wash hands before and after handling raw meat.
Heat 1 inch of oil in a large skillet over medium-high heat. Cook the chicken until browned on each side and cooked through. Drain cooked chicken on paper towels or a wire rack.
In a mixing bowl, combine waffle mix, 1 ⅓ cups milk, 1 egg, and 2 tbs oil. Grease and heat a waffle iron and cook waffle batter.
While waffles are cooking, wash, dry, and chop the apples. Heat 1 tbs butter in a small saucepan over medium-high heat. Cook the apples with the cinnamon and sugar until softened.
Serve waffles topped with cinnamon apples, chicken, and syrup. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
