Chicken Broccoli Stir Fry
A quick and flavorful meal, this Chicken Broccoli Stir Fry features tender chicken, crisp broccoli, and a savory garlic-ginger soy sauce, all served over fluffy white rice. Lightly coated in cornstarch for a crispy texture, the chicken soaks up the rich, umami-packed sauce for a delicious bite.

¼ cup Soy Sauce (or coconut aminos)
2 cups White Rice

1 lb Chicken tenders, thawed
1 lb Frozen Broccoli
1 bunch Green Onions
1 tbs minced Ginger
1 tbs minced Garlic
Directions
Wash hands with soap and water. Wash and dry the green onions and remove the root ends and any wilted parts. Slice the green onions, separating the white bottoms and green tops into two small bowls.
In a small bowl, combine the ginger and garlic, soy sauce (or coconut aminos for gluten free), and 1 tbs cornstarch, whisking well to combine.
Cook the rice using a rice cooker, if you have one, or the video.
Heat a little oil in a large skillet over medium-high heat. In a large bowl, toss together the chicken and the rest of the cornstarch. Cook the chicken in the skillet, turning occasionally, until lightly browned.
Microwave the broccoli for 2 minutes until slightly tender. Add the broccoli to the skillet, along with the white bottoms of the green onions. Add the soy sauce mixture, stirring well to coat, and remove from heat when the sauce has thickened.
Serve chicken, broccoli, and sauce over the rice topped with green onions. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
*Make this recipe soy and gluten-free by substituting ¼ cup coconut aminos for soy sauce.
