Ingredients

Pantry

  • 1 15-oz can Black Beans

  • 1 Lime

  • 4 Flour Tortillas

  • 1 packet Taco Seasoning

Fridge and Freezer

  • 1 bunch Green Onions

  • 1 lb Chicken tenders, thawed

  • 1 cup Cheddar Cheese

  • 1 cup Sour Cream

Directions
  1. Wash hands with soap and water. Preheat the oven to 350 degrees F. Open, drain, and rinse the can of black beans. Cut the lime in half using a sharp knife and a cutting board.

  2. Heat a little oil in a large pan or electric skillet over medium-high heat. Add the chicken, sprinkle with the packet of taco seasoning, and cook through. Stir in the black beans and heat through. Remove from heat and stir in the juice of the lime.

  3. On a clean plate or cutting board, divide cheese evenly between tortillas. Top the cheese with equal amounts of chicken mixture. Roll up the burritos and wrap each one in foil.

  4. Bake burritos until the cheese melts, about 15 minutes. Makes 4 burritos. Serve with sour cream. Refrigerate leftovers within 2 hours.
