Chicken Fajita Quesadillas
A delicious fusion of two Mexican-inspired favorites, these Chicken Fajita Quesadillas combine tender, seasoned chicken with sautéed bell peppers, onions, and melty cheddar cheese, all grilled inside a golden, crispy tortilla.

4 Flour Tortillas
1 Bell Pepper
1 Onion
1 packet Fajita Seasoning
Fridge and Freezer
1 8-oz bag Shredded Cheddar Cheese
8-oz Cooked Chicken
Directions
Wash hands with soap and water. Wash the bell pepper. Using a small cutting board and sharp knife, peel and chop the onion, seed and chop the bell pepper.
Preheat a skillet with oil on medium heat. Add in chicken and fajita seasoning. Cook for 4 minutes. Add in bell pepper and onion, cook for another 5 minutes or until veggies are tender and chicken is cooked through. Place in a bowl and set aside.
Wipe the pan out with paper towels and return to the heat. Add a little oil and place a tortilla on top. On half of the tortilla add the chicken mixture, and cover with ½ cup of cheese. Fold the tortilla over to close.
Once the tortilla is golden, flip it over and cook for a few more minutes until that side is golden also. Make sure the cheese has melted. Repeat the same steps with the rest of the quesadillas. The recipe makes 4 quesadillas. Serve warm. Refrigerate leftovers within 2 hours.
*Use gluten-free tortillas to make this recipe gluten-free. Fajita seasoning may contain gluten, you can make this recipe gluten-free by substituting 1 tsp chili powder, 1 tsp oregano, 1 tsp garlic powder, ½ tsp salt, and ½ tsp cumin.
