Chicken Pita Wrap

1 15-oz can Chickpeas
6 Pitas
1 tbs Greek Spice Blend
Fridge and Freezer
4 Boneless Skinless Chicken Thighs, thawed
1 10-oz bag Spinach
½ cup Caesar Dressing (optional)
Directions
Wash hands with soap and warm water. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
Pat-dry chicken with a sheet of paper towel (always wash hands before and after handling raw chicken. Transfer the chicken and chickpeas onto the baking sheet and make sure that they are on a single layer. Drizzle them with oil and sprinkle them with the Greek spice blend.
Roast for 15 minutes or until chicken is fully cooked (160-165 F degrees). Let rest for 5 minutes and then cut chicken into strips. Place the pitas in the oven and let them warm for a few minutes.
Assemble pita bread wraps with chicken, chickpeas, spinach and dressing (optional). This recipe makes 6 pitas. Refrigerate leftovers within 2 hours.
