Chicken Salad Sandwiches

A classic and refreshing meal, these Chicken Salad Sandwiches combine tender chicken, crunchy celery, sweet grapes, and a creamy dressing for the perfect balance of flavors and textures. Served between slices of whole wheat bread with crisp romaine lettuce, this easy and wholesome sandwich makes for a quick, healthy lunch.

Ingredients

Pantry

  • ¼ Red Onion

  • 2 12.5-oz cans Chicken

  • 8 slices Whole Wheat Bread

  • 1 tsp Garlic Powder

  • 1 tbs Red Wine Vinegar

  • 2 tsp Dill

Fridge and Freezer

  • ½ cup Mayonnaise

  • 2 tbs Dijon Mustard

  • 1 stalk Celery

  • 2 cups Grapes

  • 1 head Romaine Lettuce

Directions
  1. Wash hands with soap and water. Wash and chop the celery. Wash and halve 2 cups of grapes, if desired. Wash the lettuce and lay on a towel to dry. Peel and chop some red onion, reserving the rest in the fridge in a labeled container for later use.

  2. Open and drain the cans of chicken. In a medium bowl, combine the chicken, mayonnaise, mustard, dill, garlic powder, red wine vinegar, celery, red onion and grapes (see note).

  3. Lay out 4 slices of bread on a clean surface. Top each piece of bread with lettuce, then divide the chicken salad between each sandwich. Top with more lettuce and another slice of bread. The recipe makes 4 sandwiches. Refrigerate leftovers within 2 hours.

*Use gluten-free bread to make this recipe gluten-free.
