Chicken Shawarma Hummus Bowls
Inspired by Middle Eastern flavors, these Chicken Shawarma Hummus Bowls feature spiced, pan-seared chicken served over creamy hummus with a refreshing mix of marinated cucumbers, tomatoes, and red onions. Paired with warm pita bread for scooping, this dish is a flavorful, protein-packed meal that’s both satisfying and easy to prepare.

Ingredients
Pantry
1 Red Onion
1 Tomato
6 Pitas (optional)
1 tbs Greek Spice Blend
1 tbs Olive Oil
1 tbs Red Wine Vinegar
Fridge and Freezer
1 Cucumber
1 lb Chicken Tenders, thawed
6 servings Hummus
1 tbs minced Garlic
Directions
Wash hands with soap and water. Wash and dry produce. Peel, seed and chop the cucumber. Chop the tomato. Peel and chop the onion.
Combine the chopped veggies in a medium bowl. Stir in the garlic, and the packets of red wine vinegar and olive oil.
Heat a little oil in a large skillet over medium-high heat. Cook the chicken, stirring occasionally. Add the seasoning and some salt and pepper to taste, then continue to cook until browned.
If using pita, you can warm it in the toaster or oven (optional).
Divide the hummus into 6 bowls. Top with the chicken and marinated veggies, and serve each portion with a pita (optional). This recipe makes 6 servings with pita, or 4 servings for gluten-free. Refrigerate leftovers within 2 hours.
