Ingredients

Pantry

  • 1 Bell Pepper

  • 1 Onion

  • 1 15-oz can Diced Tomatoes

  • 1 packet Chili Seasoning

  • 1 15-oz can Black Beans

Fridge and Freezer

  • 1 tbs minced Garlic

  • 1 cup Cheddar Cheese

  • 1 20-oz bag Sweet Potato Fries

  • 1 lb Ground Beef, thawed

Directions
  1. Wash hands with soap and water. Wash and dry the bell pepper. Drain and rinse the beans. Peel and chop onion. Seed and chop bell pepper.

  2. Prepare fries according to package directions.

  3. Meanwhile, heat a little oil in a large skillet over medium-high heat. Cook the ground beef, breaking up with a spatula, until almost cooked through. Add the onion and bell pepper and cook until vegetables are tender and the beef is cooked through. Add garlic and cook for 1 minute more.

  4. Stir canned tomatoes, chili seasoning and black beans into the vegetables and heat until slightly thickened.

  5. Divide fries into 4 portions and top each with chili. Sprinkle it with cheese and serve. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.

*Some taco seasonings contain gluten. Check the ingredients and substitute 1 tbs chili powder, ½ tsp salt, and ½ tsp pepper if needed.
