Chili Mac
A comforting and hearty classic, Chili Mac combines the bold flavors of chili with tender macaroni pasta, all coated in a rich, cheesy sauce. Made with seasoned ground beef, tomatoes, and melted cheddar, this dish is a perfect one-pot meal that’s both filling and easy to prepare.

3 tbs Tomato Paste
1 Onion
2 cups Macaroni Pasta
1 packet Chili Seasoning
1 15-oz can Diced Tomatoes
Fridge and Freezer
1 lb Ground Beef, thawed
1 8-oz bag Cheddar Cheese
Directions
Wash hands with soap and water. Peel and dice the onion.
Heat a little oil in a large skillet over medium heat. Sauté the onion in the skillet until soft and translucent. Add ground beef and cook until the meat is no longer pink. Drain any excess fat.
Add the chili seasoning and stir well. Add the canned tomatoes (including juice), 3 tbs tomato paste, and 2 ½ cups of water. Bring the mixture to a boil.
Add the macaroni noodles, continuing to heat until everything is boiling. Reduce heat to a simmer and cover with a lid. Cook for 10 minutes until the pasta is cooked all the way through.
Remove from heat. Stir in ½ cup of the cheese and stir well. Spread the remaining cheese over the top and place the lid back onto the pan and let it sit for 2 to 3 minutes until the cheese has all melted. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
*To make this recipe gluten-free, use gluten free pasta and chili seasoning.
