Chorizo Black Bean Tacos

These Chorizo Black Bean Tacos are a bold and flavorful meal featuring spiced turkey chorizo baked with black beans and juicy cherry tomatoes, then topped with melty cheddar cheese. Served in warm tortillas with a dollop of creamy sour cream, this dish is both satisfying and easy to prepare.

Ingredients

Pantry

  • 1 15-oz can Black Beans

  • 8 Corn Tortillas

  • 1 pint Cherry Tomatoes

Fridge and Freezer

  • ¼ cup Sour Cream

  • 1 lb Turkey Chorizo, thawed

  • 1 cup Cheddar Cheese

Directions
  1. Wash hands with soap and water. Preheat the oven to 450°F. Wash and dry the tomatoes. Drain and rinse the beans. Grease a casserole dish.

  2. In the casserole dish, combine the tomatoes and drained beans. Season with salt and pepper if desired; stir to combine. Add the chorizo (tearing into bite-sized pieces before adding) in an even layer (always wash hands before and after handling raw meat).

  3. Bake, uncovered, for 12 minutes. Leaving the oven on, remove from the oven. Evenly top with the cheese.

  4. Return to the oven and bake for 3 to 5 minutes, or until the cheese is melted and the chorizo is cooked through. Remove from the oven.

  5. Meanwhile, heat the corn tortillas using the video

  6. Serve the baked chorizo and beans in the warmed tortillas. Top with the sour cream. This recipe makes 4 large soft tacos. Refrigerate leftovers within 2 hours.
