Chorizo Nachos

These Chorizo Nachos are a bold and flavorful take on a classic, featuring crispy tortilla chips layered with spicy turkey chorizo, black beans, and enchilada sauce. Topped with melty cheddar cheese and baked until golden, they’re finished with fresh tomatoes, red onion, cilantro, and a dollop of sour cream. These nachos are a delicious mix of crunchy, cheesy, and zesty flavors!

Ingredients

Pantry

  • 1 bag Tortilla Chips

  • ¼ Red Onion

  • 1 15-oz can Black Beans

  • 1 can Enchilada Sauce

  • 2 Tomatoes

Fridge and Freezer

  • 1 lb Ground Turkey Chorizo, thawed

  • ½ cup Sour Cream

  • 1 8-oz bag Cheddar Cheese

  • 1 bunch Cilantro

Directions
  1. Wash hands with soap and water. Preheat the oven to 425 degrees, and grease a large baking sheet. Wash and dry produce. Chop the tomatoes and ¼ of a red onion. Remove the stems and chop the cilantro.

  2. Heat a little oil in a large skillet over medium-high heat. Cook the chorizo, breaking it up with a spatula, until browned.

  3. Add the black beans and the liquid from the can, along with the enchilada sauce, to the chorizo. Bring to a simmer and cook, stirring occasionally, for about 5 minutes.

  4. Spread the tortilla chips on the baking sheet and top with the chili. Sprinkle with the cheddar cheese and bake until the cheese is melted and barely browned.

  5. Serve nachos topped with tomatoes, red onion, cilantro and sour cream. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
