4 Russet Potatoes
1 Onion
1 tbs All Purpose Spice Blend
Fridge and Freezer
4 Eggs
1 cup Bacon Bits
Directions
Preheat the oven to 350 degrees. Wash hands with warm water and soap. Wash and dice the potatoes. Peel and chop the onion. Heat a large oven-safe skillet over medium-high heat with cooking oil. Once the pan is hot, add the potatoes and spice blend and cook for 5 minutes, stirring occasionally.
Once the potatoes have started to soften, add the onion to the skillet and cook for another 5-10 minutes, or until the potatoes begin to brown. Add the bacon bits to the skillet and heat through.
Use the spatula to create spaces to crack each egg into. Be careful not to move the yolk around after each egg is in the skillet. Season with salt and pepper, if desired.
Place the skillet into the oven and bake for 6-10 minutes, until the egg whites are set. Divide the dish evenly into 4 servings. Refrigerate leftovers within 2 hours.
