Cowboy Salad with Tortilla Chips
This Cowboy Salad is a fresh and vibrant mix of black beans, corn, tomatoes, cucumber, and green onions, tossed in a simple lime dressing for a zesty kick. Ingredients
Pantry
1 Lime
3 Tomatoes
2 15-oz cans Black Beans
1 15-oz can Corn
4 servings Tortilla Chips
Fridge and Freezer
1 Cucumber
1 bunch Green Onions
Directions
Wash hands with soap and water. Rinse and dice the tomatoes. Rinse and dice the cucumber. Trim off the roots and wilted parts of the green onions and dice. Open and rinse the cans of beans and corn.
Combine the beans and veggies in a large bowl.
Wash the lime, cut in half, then squeeze the juice into a small bowl. Add 1 tbs oil and season with salt and pepper. Whisk to combine. Add to the bowl of beans and toss to coat.
Divide into 4 portions. Provide each serving with 1 serving of tortilla chips (about 16 chips). Makes 4 servings. Refrigerate leftovers within 2 hours.
