Ingredients

Pantry

  • 1 tbs Sesame Oil

  • 1 15-oz can Corn

  • 1 lb Spaghetti Pasta

  • 1 tbs Sesame Seeds

Fridge and Freezer

  • 1 bunch Green Onions

  • 1 tbs minced Garlic

  • 2 tbs Miso Paste

  • 2 tbs Hummus

  • 1 lb Ground Beef, thawed

  • ¼ cup Hoisin Sauce

Directions
  1. Wash hands with soap and water. Drain and rinse the corn. Wash and dry the green onions. Dice the green onions, discarding the roots and separating the white bottoms from the green tops.

  2. Bring a large pot of water to a boil over high heat and cook the pasta according to package instructions. Drain, reserving ¼ cup of the pasta water for the sauce. Return the pot with the pasta to the stove, reduce to medium heat, and stir in the miso, hummus, sesame oil, and reserved water. Continue stirring until it thickens to a creamy sauce. Remove from heat.

  3. Meanwhile, heat a little oil in a large skillet over medium-high heat. Cook the corn until browned, then remove to a bowl.

  4. Return the pan to the stove and cook the ground beef, garlic, and white bottoms of the green onions, breaking up with a spatula, until browned. Add the hoisin and stir until coated. Remove from heat.

  5. Divide noodles, beef and corn into 4 bowls and top with sesame seeds and green onions. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.
