6 Red Potatoes
½ cup Breadcrumbs
1 packet Ranch Seasoning
Fridge and Freezer
½ cup Parmesan cheese
1 lb Chicken Breasts, thawed
12 oz Green Beans
¼ cup Butter
¼ cup Mayonnaise
Directions
Wash hands with soap and water. Preheat the oven to 450 degrees. Grease a roasting pan or baking sheet. Wash the potatoes and green beans. Cut the potatoes into ½-inch-thick wedges. Toss them with oil and half of the ranch seasoning. Spread them on one side of the prepared pan.
Melt 2 tbs butter in a small microwave-safe bowl. Add the parmesan and breadcrumbs and half the ranch seasoning to a bowl, stir to combine, and pour the melted butter over the top.
Pat the chicken dry with paper towels (always wash your hands with soap and water before and after handling raw meat). Arrange the chicken breasts on the other side of the pan with the potatoes. Spread 1 tbs mayonnaise on each breast, then sprinkle with the cheesy breadcrumbs
Roast the potatoes and the chicken for 20-25 minutes, or until chicken is cooked through and potatoes are tender.
Meanwhile, cook the green beans in the boiling water for a few minutes until bright green, then drain. Toss with remaining 2 tbs butter and season with salt and pepper, if desired.
Serve chicken with roasted potatoes and green beans. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
