Ingredients

Pantry

  • 6 Pitas (or GF crackers)

  • 1 can Artichoke Hearts

  • 1 small jar sliced Roasted Red Peppers

  • 1 can Whole Black Olives

  • 1 pint Cherry Tomatoes

Fridge and Freezer

  • 1 cup Plain Greek Yogurt (optional)

  • 6 servings Hummus

  • 1 container Salami (or deli turkey)

Directions
  1. Wash hands with soap and water. Season the Greek yogurt with salt and pepper.

  2. Skip this step if making this recipe gluten-free. Heat a large skillet over medium-high heat. Brush both sides of each pita with oil and season with salt. Working in batches, add the pita to the skillet and toast until golden brown, about 2 minutes per side. Slice each pita into quarters.

  3. To assemble, divide the pitas (or crackers for gluten-free), Greek yogurt (omit for dairy-free), hummus, artichoke hearts, roasted red peppers, olives, tomatoes and salami (or turkey for pork-free) among six plates. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.

*Omit Greek yogurt to make this recipe dairy-free.

*Omit pitas or replace with gluten-free crackers to make this recipe gluten-free.

*Replace salami with another deli meat to make this recipe pork-free.
