Egg Roll Bowls

Our Egg Roll Bowls are a deconstructed take on the classic egg roll, packed with savory ground turkey, shredded cabbage, and carrots for a flavorful and nutritious meal. Seasoned with soy sauce, ginger, garlic, and sesame seeds, this dish brings the taste of takeout without the deep frying.

Ingredients

Pantry

  • 2 tbs Soy Sauce (or coconut aminos)

  • 2 tbs White Wine Vinegar

  • 1 tbs Sesame Seeds

  • 1 cup White Rice

Fridge and Freezer

  • 1 tbs Hot Sauce

  • 1 tbs minced Ginger

  • 1 tbs minced Garlic

  • 3 Carrots

  • 1 bag Shredded Cabbage

  • 1 bunch Green Onions

  • 1 lb Ground Turkey, thawed

Directions
  1. Wash hands with soap and water. Wash and dry the carrots and green onions. Peel and grate the carrots. Remove the root ends of the green onions and chop.

  2. Use the video or a rice cooker to prepare the rice.

  3. In a large skillet, heat a little oil over medium-high heat. Add the carrots and cabbage, and cook until tender, about 3 minutes. Add the white parts of the green onions, ginger and garlic, and cook until fragrant, about 1 minute.

  4. Add the ground turkey and cook until no longer pink. Add the soy sauce (or coconut aminos for gluten free), white wine vinegar, sesame seeds, and 1 tbs hot sauce, stir into the ground turkey, and heat through. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.

*Some soy sauce contains gluten. Replace with coconut aminos to make this recipe soy and gluten-free.
