Egg Tacos
These Egg Tacos are a quick and protein-packed breakfast or brunch option featuring fluffy scrambled eggs seasoned with taco spices, melted cheddar cheese, and a touch of hot sauce for extra flavor. 1 packet Taco Seasoning
4 servings Fruit Cups
8 Corn Tortillas
Fridge and Freezer
1 tbs Hot Sauce
8 Eggs
1 cup Cheddar Cheese
Directions
Wash hands with soap and water. Beat the eggs and taco seasoning in a bowl. Heat a large skillet to medium-high heat with a little oil. Add the eggs and cook, stirring constantly, until done.
To heat corn tortillas, you can use a dry skillet or pan over medium-high heat, heating each side for 10-20 seconds until soft and warm, or you can use a microwave with damp paper towels.
To make the tacos, fill tortillas with eggs, cheese, and hot sauce if desired. Serve fruit on the side. The recipe makes 8 tacos, 1 serving is 2 tacos. Refrigerate leftovers within 2 hours.
*Taco seasoning may contain gluten; check the ingredients. You can substitute 1 tsp chili powder, 1 tsp oregano, 1 tsp garlic powder, ½ tsp salt, and ½ tsp cumin.
