  • 4 Hamburger Buns

  • 1 small Watermelon

  • 1 tbs All Purpose Spice Blend

  • 1 ½ cups Flour

  • 1 tsp Baking Powder

Fridge and Freezer

  • 4 Boneless Skinless Chicken Thighs, thawed

  • ¼ cup Mayonnaise (optional)

  • 1 cup Pickles

  • 1 ½ cups Buttermilk

  • 1 tbs Hot Sauce

Directions
  1. Wash hands with soap and water. In a leak-proof plastic bag or container, combine the buttermilk and hot sauce. Add the chicken, seal, and shake to coat. Marinate in the fridge for 2-8 hours before cooking. Always wash hands before and after handling raw meat.

  2. Wash hands with soap and water. In a shallow dish, combine the flour, spice blend, and baking powder. Remove a piece of chicken from the marinade, letting excess drip off and dip chicken into flour mixture, pressing it on with your hands to coat well (always wash hands before and after handling raw meat).

  3. Heat a little oil in a large skillet over medium-high heat. Dip each piece of chicken in the flour mixture one last time before adding to the pan. Cook on each side until browned and chicken is cooked through.

  4. Toast buns and spread them with mayonnaise or desired sauce. Top each bun with chicken and pickles. Slice watermelon and serve on the side. This recipe makes 4 sandwiches. Refrigerate leftovers within 2 hours.

*Replace mayonnaise with another condiment to make this recipe egg-free.
