Fully Loaded Quesadillas

1 Bell Pepper
1 Onion
8 Flour Tortillas
1 packet Taco Seasoning
1 can Enchilada Sauce
Fridge and Freezer
1 cup Sour Cream
1 lb Ground Beef, thawed
1 8-oz bag Cheddar Cheese
8 servings Guacamole
Directions
Wash hands with soap and water. Wash, dry, seed and chop the bell pepper. Peel and chop the onion.
Heat a large skillet over medium-high heat and cook the ground beef, onion and bell pepper, breaking up with a spatula, until meat is browned and vegetables are tender. Stir in the taco seasoning and half of the enchilada sauce and cook until thickened. Remove from the heat.
Heat oven to broil and grease a baking sheet. Spread out tortillas on a clean surface. Top one half of each tortilla with the ground beef mixture and some cheese, diving evenly between all tortillas. Carefully fold over and transfer to the baking sheet.
Broil for 2-4 minutes, watching carefully as ovens may vary.
Serve quesadillas with sour cream and guacamole. This recipe makes 8 servings. Refrigerate leftovers within 2 hours.
