Ingredients

Pantry

  • 1 Lemon

  • 4 Hamburger Buns

  • 1 tbs Greek Spice Blend

  • 1 Red Onion

  • 2 Tomatoes

  • 4 Russet Potatoes

Fridge and Freezer

  • 1 tbs minced Garlic

  • 1 Cucumber

  • 1 lb Ground Turkey, thawed

  • 1 cup Plain Nonfat Greek Yogurt

  • 1 head Green Lettuce

  • 1 4-oz container Feta

Directions
  1. Wash hands with soap and water. Preheat the oven to 450 degrees. Wash and dry the fresh produce. Peel and grate the cucumber and set in a bowl. Slice the tomato. Remove some leaves from the head of lettuce. Thinly slice the red onion. Halve the lemon.

  2. Cut the potatoes into fries. Toss the fries with a little oil, and lay out on the baking sheet. Season with salt and pepper and bake until browned and tender, about 20 minutes. Sprinkle hot fries with feta when they are done cooking.

  3. In a medium bowl, combine ground turkey and Greek seasoning. Form the meat mixture into four patties of equal size (always wash hands before and after handling raw meat). Cook the burgers in the skillet on each side until browned and cooked through.

  4. Drain the juices from the grated cucumber and press with paper towels to remove most of the liquid. Combine with the garlic, yogurt, juice of the lemon, half the feta, and salt and pepper to make tzatziki sauce.

  5. Place each burger on the bottom half of a bun and then top each with about ¼ cup tzatziki, red onion, two lettuce leaves, tomato slices and the top half of the bun. Serve burgers with fries on the side. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
