Ingredients
Pantry
¼ Red Onion
1 packet Taco Seasoning
1 15-oz can Refried Beans
1 Tomato
4 Flour Tortillas
Fridge and Freezer
1 8-oz bag Shredded Lettuce
½ cup Sour Cream (optional)
1 cup Cheddar Cheese (optional)
1 cup Salsa
1 lb Ground Beef, thawed
Directions
Wash hands with soap and water. Wash, dry and chop the tomato. Chop ¼ of a red onion, wrapping and reserving the rest in the fridge for another use.
Heat a large skillet over medium-high heat. Brown the ground beef, breaking up with a spatula. When beef is almost done, add the taco seasoning. Add a splash of water if it seems to dry.
When beef is cooked through and browned, stir in refried beans. Heat through and remove from heat.
Lay out tortillas on a clean surface. Divide beef mixture between tortillas and top with cheese. Add lettuce, tomato, red onion, salsa, and sour cream as desired. Fold in one end, then roll up and serve. This recipe makes 4 burritos. Refrigerate leftovers within 2 hours.
*Taco seasoning may contain gluten; check the ingredients. You can substitute 1 tsp chili powder, 1 tsp oregano, 1 tsp garlic powder, ½ tsp salt, and ½ tsp cumin. Make this recipe gluten-free by using gluten-free tortillas.
*Make this recipe dairy-free by omitting cheese and sour cream.
