Ham and Vegetable Chowder
Our Ham and Vegetable Chowder is a hearty and comforting soup featuring savory ham, tender potatoes, shredded cabbage, and sweet corn simmered in a flavorful broth. Finished with melted cheddar cheese, this rich and satisfying chowder can be prepared on the stovetop or in a slow cooker. A warm and nourishing meal perfect for any time of year.

Pantry
4 Russet Potatoes
2 15-oz cans Broth
1 15-oz can Corn
1 Onion
Fridge and Freezer
1 lb diced Ham
1 cup Cheddar Cheese (optional)
1 10-oz bag Shredded Cabbage
Directions
Wash hands with soap and water. Scrub the potatoes well and peel if desired. Dice into small cubes. Peel and chop the onion. Open and drain the can of corn.
Heat oil in a 4 quart (or larger) saucepan. Saute onion over medium heat, stirring often, until soft, about 10 minutes.
Choose one of the following cooking methods:
STOVETOP METHOD: Add cabbage and potato and saute until tender. Add broth, corn, ham, and season with salt and pepper. Cover and simmer until potato is tender, about 10 minutes.
SLOW COOKER METHOD: Add the sauteed onion to a greased slow cooker. Potatoes, broth, and ham. Cook for 4-6 hours on low or 2 hours on high. Add the cabbage and corn and cook for 2 hours more.
Divide soup into 4 servings, about 2 ½ cups each. Serve hot, sprinkled with cheese, if desired. Refrigerate leftovers within 2 hours.
*Omit the cheese to make this recipe dairy-free.
