Ham with Mashed Potatoes and Winter Vegetables

A cozy, holiday feast featuring savory baked ham alongside creamy mashed potatoes and maple-roasted Brussels sprouts and butternut squash. Sweet cranberries, crunchy pecans, and tangy goat cheese add the perfect finishing touches, with apple pie to round out this comforting, crowd-pleasing meal.

Ingredients

Pantry

  • 1 tbs Pumpkin Spice

  • 1 tbs Chili Powder

  • ¼ cup Dried Cranberries

  • ½ cup Pecans (optional)

  • 8 Russet Potatoes

Fridge and Freezer

  • ½ cup Milk

  • 1 lb Brussels Sprouts

  • 1 package diced Butternut Squash

  • 1 tbs minced Garlic

  • 4 oz Goat Cheese (optional)

  • 2 tbs Butter (optional)

  • 1 Spiral Cut Ham

  • 2 tbs Pancake Syrup

  • 1 Apple Pie

Directions
  1. Wash hands with soap and water. Preheat the oven to 400 degrees. Bake the ham according to package instructions.

  2. Cut the root end off the brussels sprouts and cut any large ones in half. Grease a large roasting pan. Add the brussels sprouts and squash to the large roasting pan and toss with pancake syrup, 2 tbs oil, and spices. Roast in the oven for 15 minutes then flip and roast for an additional 15 minutes until brussels turn a slight golden brown and squash is fork tender.

  3. Meanwhile, bring a large pot of salted water to a boil. Scrub and peel the potatoes, then cut into large chunks. Boil until tender, drain, and mash with ½ cup milk (more or less to taste), salt and pepper, and 2 tbs butter (omit for dairy-free).

  4. Once the butternut squash and brussels are done roasting, transfer them to a large serving bowl and gently fold in the dried cranberries and the pecans (omit pecans for nut-free). Garnish with goat cheese (omit for dairy-free).

  5. Serve ham with mashed potatoes and roasted vegetables. Cut apple pie into 6 slices and serve for dessert. This recipe makes 6 servings. Refrigerate leftovers within 2 hours.

*Make this recipe dairy-free by omitting the butter and goat cheese and using a milk alternative.

*Leave out the pecans to make this recipe nut-free.
