Hamburger Skillet

1 Onion
1 Bell Pepper
1 cup White Rice
1 tbs All Purpose Spice Blend
1 15-oz can Diced Tomatoes
1 15-oz can Corn
1 15-oz can Kidney Beans
Fridge and Freezer
1 lb Ground Beef, thawed
1 cup Cheddar (optional)
Directions
Wash hands with soap and water. Heat a large skillet over medium heat (300 degrees F in an electric skillet). Peel and chop the onion. Wash, seed, and chop the bell pepper. Open and drain the cans of corn and beans.
Cook ground beef, onion, bell pepper and corn in the skillet, breaking up with a spatula, until the ground beef is no longer pink.
Add 2 cups of water, rice, spice blend, canned tomatoes with liquid, and beans to the skillet. Cover the pan and cook for about 20 minutes or until rice is soft.
Remove from heat, sprinkle with cheese (omit for dairy-free). Makes 6 servings. Refrigerate leftovers within 2 hours.
*Omit cheese to make this recipe dairy-free.
