Ingredients

Pantry

  • 2 cups White Rice

  • 1 tbs Sesame Oil

  • 1 tbs Rice Vinegar

  • 1 tbs Sugar

  • ¼ cup Peanuts

  • 1 Lime

Fridge and Freezer

  • 1 Cucumber

  • 2 Carrots

  • 1 bunch Green Onions

  • 1 package Pulled Pork

  • ¼ cup Hoisin Sauce

Directions
  1. Wash hands with soap and water. Preheat the oven to broil and grease a baking sheet. Wash and dry produce. Cut the lime into wedges. Thinly slice the green onions, discarding the root ends. Peel the carrots, then grate or thinly slice. Peel, seed and slice the cucumbers.

  2. Cook rice using a rice cooker or the video.

  3. Combine the carrots, cucumber, sesame oil, rice vinegar, and ½ tbs sugar, and season with salt. Toss and set aside to marinade.

  4. Spread the pulled pork on the greased baking sheet and broil until browned (5-10 minutes, watch closely as ovens may vary). Remove from the oven, drizzle with hoisin sauce, and stir to combine.

  5. To serve, divide the rice into 4 bowls and top with pork, marinated vegetables, a squeeze of lime juice, and sprinkle with green onions and peanuts. This recipe makes 4 servings. Refrigerate leftovers within 2 hours.
