Holiday Quesadilla
This Holiday Quesadilla is a festive twist on a classic quesadilla, featuring melty mozzarella, tender cooked chicken, sweet dried cranberries, and fresh spinach folded into a crispy flour tortilla. ¼ cup Dried Cranberries
4 Flour Tortillas
Fridge and Freezer
1 8-oz bag Mozzarella Cheese
8-oz Cooked Chicken
2 cups Spinach
Directions
Wash hands with soap and water. Grease an electric skillet or large frying pan and heat to medium-high. Lay 4 tortillas on the skillet (you can do this in batches if they do not all fit).
Divide cranberries, chicken, spinach and cheese evenly on one half of each tortilla. Fold the tortilla in half over the top of the fillings.
Cover and cook for 2-3 minutes until golden brown. Carefully flip and cook on the other side until browned and heated through.
Cool slightly and serve. Makes 4 quesadillas, 1 serving is 1 quesadilla. Refrigerate leftovers within 2 hours.
