Italian Grinder Sandwiches is a bold and flavorful take on the classic grinder sandwich, a hearty, oven-toasted sub known for its crispy bread, melted cheese, and layers of deli meats and fresh toppings. This version features warm, toasted French bread with melted cheddar, stacked with deli turkey, savory salami, juicy tomatoes, and crisp iceberg lettuce tossed in zesty Italian dressing. Finished with a sprinkle of Parmesan, it’s a satisfying mix of crunch, creaminess, and bold Italian flavors.

Ingredients

Pantry

  • 1 tbs Red Wine Vinegar

  • 1 tsp Salt

  • 1 tbs Italian Seasoning

  • 1 tsp Red Pepper

  • 6 Hoagie Rolls

  • 4 Tomatoes

Fridge and Freezer

  • ½ cup Mayonnaise

  • 1 cup Pepperoncini

  • 2 tbs minced Garlic

  • ½ cup Parmesan

  • 1 head Iceberg Lettuce

  • 12 slices Cheddar Cheese

  • 6 oz Salami

  • 9 oz Deli Turkey

Directions
  1. Wash hands with soap and water. Preheat the oven to 425 degrees and grease a baking sheet. Wash the lettuce, pat dry, and cut into chunks. Wash and slice 2 tomatoes.

  2. In a large mixing bowl, whisk together the mayonnaise, red wine vinegar, salt, Italian seasoning, red pepper flakes, pepperoncini and garlic. Add the lettuce to the bowl and toss with the dressing.

  3. Open the hoagie rolls on the prepared baking sheet. Top the bottoms of each sandwich with 2 slices of cheddar cheese, and toast all the bread, cut side up, on a baking sheet for 5 minutes or until cheese is melted and bread is toasted.

  4. Using oven mitts, remove the pan of bread from the oven. Top the melted cheese with the tomato, turkey, and salami. Top with the marinated lettuce and the parmesan. Place the other piece of bread on each sandwich and serve.

  5. Makes 6 sandwiches. Refrigerate leftovers before serving. If saving some sandwiches for later, wait to marinate the lettuce, toast the bread, and assemble until right before serving.
