Loaded Baked Potato Soup

1 Onion
2 Russet Potatoes
1 15-oz can Broth
2 tbs Cornstarch
Fridge and Freezer
1 ½ cups Milk
1 stalk Celery
1 bunch Green Onions
1 cup Cheddar Cheese
½ cup Bacon Bits
Directions
Wash hands with soap and water. Wash the potato, peel and dice. Dice the green onions, discarding the wilted part and roots. Wash the celery and peel the onion and chop both.
Heat a little oil in a saucepan over medium-high heat. Saute the onions and celery in the saucepan. Add the potatoes and broth and season with salt and pepper, if desired. Bring to a boil and stir, then reduce heat to low. Cover and simmer until the potato is tender, 15 to 25 minutes.
In a small bowl, stir together cornstarch and ¼ cup of milk until smooth. Add remaining 1¼ cups milk. Stir into the potato mixture.
Cook and stir until thickened and heated through, about 5 minutes. Do not boil. Remove from heat.
Stir in cheese until melted. Top with bacon bits and green onion. Serve warm. Makes 4 servings. Refrigerate leftovers within 2 hours.
